breakfast casserole

rule #1: your crock pot is your friend.

this recipe is for anyone who loves a good omelet. It is basically your favorite made to order omelet in a crock pot. great for busy weeknights, or weekends when you want a nice, big, breakfast. no need to go to the diner, save some money with this quick and easy recipe!

you will need:

8 eggs
milk
2 ham steaks, diced
1 onion, diced (if small, use 2!)
1 pepper, diced
2 cups shredded cheese (I use cheddar, use your favorite)
salt and pepper
1 bag frozen tater tots or hash browns

feel free to throw in any other veggies, meats or cheeses you like. customize it for your or your family's tastes. I love to throw in spinach, mushrooms, tomatoes and feta to change it up! my husband LOVES western omelets, so this is what works for us.

how to make it:

spray the crock pot insert with a non-stick spray. begin layering all the ingredients... tater tots, ham, onion, pepper, cheese. repeat until you run out of something or your crock pot is full.

now, whisk 8 eggs in a bowl with a touch of milk and A LOT of salt and pepper. pour them over the layers in the pot.

easy as that. set it on low for 4-6 hours or until the eggs are fluffy and the cheese is gooey.

it's a winner every time :)
