last nights dinner: taco remix

Tacos... with a twist

Tacos are one of our favorite meals. I think Aaron asks for them every week when I plan my grocery store list! I get tired of the same old thing, so last night I changed it up a little. Chicken tacos with black beans, corn, onions and peppers. Kind of like fajitas, but not. I guess this is what happens when chicken fajitas and tacos get married :) They were a huge hit... in fact, there were no left overs for my lunch!

4 chicken breasts, grilled and sliced very thin
1 onion, sliced
1 pepper, diced
1 pkg frozen corn
1 can black beans, drained and rinsed
1 pkg taco seasoning

taco shells of your choice: we use hard and soft
other toppings we use: sour cream, salsa, shredded cheese, lettuce, tomato, cheese wiz, taco sauce, and corn chips (we go all out for taco night)

Grill the chicken and let it rest. Slice very thin after 4-5 minutes. In a large saute pan, on medium heat, combine the frozen corn, onions, peppers and black beans. Keep stirring these around until they begin to soften. Then, add the chicken. Sprinkle with taco seasoning mix and add a little water (1/3 cup). Once all the veggies are cooked and the seasoning has had a chance to be soaked up (5-10 min) begin building you taco!

Try fajitas with soft shells, sour cream and taco sauce!
or.... nachos! build a base with chips and top with the chicken mixture, cheese, salsa and sour cream!

The possibilities are endless :)
